1 cup almond flour
¼ cup coconut flour
1 teaspoon baking powder
¼ teaspoon salt
½ cup 4 ounces butter, melted
2 Jumbo eggs
½ cup granulated sweetener
¾ cup unsweetened macadamia nut butter
½ teaspoon vanilla extract
2 Tablespoons Sugar-free strawberry Jam
2 Tablespoons roasted, salted macadamia nuts, chopped
In a medium bowl mix almond flour, coconut flour, baking powder, and salt together and set aside.
In another bowl whisk together melted butter, eggs, nut butter, sweetener, and vanilla extract, be sure to mix them until they are fully combined and smooth.
Stir wet mixture into the dry ingredients and mix until fully combined. Mixture will be thick.
Scoop batter into a well greased 8x8 square baking tray and spread out to even.
Add dollops of the strawberry jam and spread out or swirl over the surface then sprinkle with the chopped macadamia nuts.
Bake at 350F for approximately 30 minutes
When Blondies are done, the edges should be firm and look slightly golden brown; the center should be set and look somewhat puffed but should still feel soft if gently touched.
Allow to cool before cutting, but they are best when still slightly warm. Enjoy.
